Ray’s Quick’n’fresh Salsa:
This recipe has been exported to many places in the
US and is popular because is SO easy. You’ll need:
One 28 oz OR two 14.5 oz. cans of plain old diced tomatoes
2 – 4 serrano peppers (my favorite) or jalapenos (4 is awful hot)
1 large onion
FRESH cilantro
Place all the juice from the tomatoes and HALF the tomatoes in the blender/processor,
plus a good handful of the fresh cilantro (usually that’s about 1/3
of a bunch from the market) and the peppers (from which you have removed
the stem.
Blend these well. I like to use the pulse button for control.
Clean the onion and cut it into several chunks. Add the onion to the blender
and again using the pulse control blend until the onion is cut up but
not pulverized. It’s ready.
To spice things up, you can experiment by adding small amounts (less than
a teaspoon) of
White vinegar
Ground cumin
Fresh lime juice
Salt and pepper to taste
but that’s not necessary to enjoy the basic recipe. I suggest you
add the second set of ingredients in very small amounts at a time, as
it’s easy to overpower the salsa.
