Hominy and Dried Corn |
About our Hominy |
|
About Traditional Osage Red Corn For the last 60 years, my father, Raymond Red Corn Jr., has
kept our namesake Osage Red Corn viable by planting backyard patches for
use by our family during I-lon-schka (Osage Ceremonial dances). It has
taken years to build stock of this ancient variety to commercial quantities.
Even though quantities are still limited, we've decided to share
as much as we can with our customers across the U.S. The corn has been processed into hominy, and has been described by food critics as 'meaty', 'rosy' and 'full of corn flavor not found in current varieties'. Corn experts such as Carl Barnes have noted that our strain has 3-4 times as much protein as average corn. When Europeans first met the Osage, the men averaged 6'-6" tall, some reaching 7 feet. Coincidence? We don't think so. |
