About our Hominy Hominy and Posole are different regional names for corn that
has been harvested in the fall as a dried grain and then processed into
hominy/posole. This is done by boiling the corn in a solution of lye or
lime until the outer shell softens. The corn is then rinsed and dehydrated
for long-term storage. Back home we use equal parts of corn and clean,
sifted wood ash mixed and boiled in water for a few hours, rinsing and
sun-drying afterwards. Dried corn is harvested in mid-summer when the corn is 'sweet' or in a 'milk stage'. It is often boiled for a few moments on the cob to "set the milk", then the kernels are removed the from the cob and dehydrated. When used in corn soup, these wonderful flavors come through, flavors that just can't be duplicated with frozen or canned corn. |
